Vegetarians May Desire Lab-Developed Meat — Market Talk

DJ-Meat grown from animal cells–versus the conventional kind cut
from animals themselves–won’t be commercially available for several more years, but already may have cornered one unlikely market: Vegetarians. Since lab-developed steaks and ground beef don’t involve raising, slaughtering and processing animals, they have the potential to woo back lapsed carnivores like Paul Shapiro, executive at the Humane Society of the US and a vegan for 22 years.

Last year he sampled some beef jerky developed by startup Modern Meadow, saying that “just in the same way kerosene helped free whales from harpoons, cultured meat could potentially spare chickens and pigs from factory farms and slaughter plants.” (jacob.bunge@wsj.com; @jacobbunge)
